This is the most amazing breakfast bar I think I have ever made.
Being busy doesn’t mean you can’t eat well. I love grab and go breakfasts for those days when you just don’t have much time. Even on the days I do have time, I still love this breakfast bar. I could actually live on it!
I have made a lot of breakfast bars in my time, but this one has to be my fav. So much so, that I haven’t made any others since making this one. I just keep repeating the same recipe – changing the nuts and seeds on occasion, but I just love this combo.
It’s packed full of those healthy fats that we love for our brain, plus it has a good dose of protein and some lovely calming oats. It is packed with fibre to boot. Trust me, you will be full for ages with a couple squares of this.
I now double the batch so I can have a batch in the freezer for a mid-morning snack, or to give to someone in the family.
I have even got to the stage where I am buying bananas to over ripen just so I can make this breakfast bar.

- 2 ripe Bananas
- 1 ½ cups Gluten Free Oats
- ¼ cup Chia Seeds
- ¼ cup Walnuts
- ½ cup Sunflower Seeds
- ½ cup Butter or Coconut Oil
- ¼ cup Shredded Coconut
- 2 Tbsp Maple Syrup or coconut syrup/honey
- Pinch Sea Salt
Preheat oven to 150 degrees.
Please all ingredients in a food processor. Blend ingredients until there is still a bit of texture but has come together.
Place mix in a 8x10 inch baking dish (approx. size) covered with baking paper.
Bake for 60 minutes, or until golden.
Cut into squares and enjoy!
Will keep for about a week in the fridge, or freeze if you like.
