Hello green goodness! I love finding ways to get more greens into my diet (and that of my clients). When I think about new recipes, I sometimes think of it for myself, and other times I really try and think about how to make things easier for my clients.
We are always talking about food as being a precursor to health, so filling ourselves with loads of greens, good fats and proteins is essential for good health.
This delish recipe came about by accident! I had made some yummy Thai Chicken Koftas, and was about to serve them and realised I had no sauce to go with it! How that happened, I have no idea. So I went to the fridge, played around with the ingredients and came up with this dip. And it was amazing. So tasty, and goes with anything.
You could either serve it with some chicken, lamb, vegetables, or crackers as an afternoon treat.
Recipes don’t have to be hard. You don’t need all the latest fad ingredients – you just need a little bit of time to play around and try flavours together.
Food should be an enjoyable experience, not cause stress at the end of the day when you are trying to think of something to have for dinner.
- 1 Avocado
- Juice of 1 Lime
- 1 cup Spinach
- ¼ cup Parsley
- Salt to taste
- 2 Tbsp Organic Yogurt or Coconut Yoghurt
- 1 Tbsp Olive Oil
Place all ingredients in blender and blend until smooth.
