Quinoa sweet potato and leek soup

There is nothing more comforting than a bowl of soup on a rainy day. This is a twist on the traditional potato and leek soup. Enjoy

2 leeks, diced

2 cups sweet potato, cup into 1cm cubes

1 cup quinoa, rinsed (soaked first if possible)

2 litres vegetable stock or bone broth

4 cloves garlic, crushed

Sea salt and pepper to taste

1 Tbsp. olive oil

Heat oil in a large pot and cook off the leek and garlic, until just tender. Add the sweet potato and cook for a couple minutes, then add the stock, quinoa and salt and pepper. Cook on high heat for 40 minutes, or until the quinoa and sweet potato are tender and cooked through. If you would like it a little thinner, then simply add a bit more stock as it’s cooking. Serves 4
